Day 353 – National Bacon Day

When I heard it was National Bacon Day, I just knew I had to find a way to make it my intention. Everyone in my family loves bacon! So I decided to make something I saw on a menu in a restaurant a while back. I didn’t actually order it but it intrigued me.

I made BLT’s but added an over medium egg and sliced avocado. Even better yet, I served it in a soft, fresh, top split roll which kept it from all falling apart. I made rosemary parmesan fries on the side and dinner was served!! It was all extremely delish and a big hit with the fam and I am happy to have participated in this national day.
